Lemon, Garlic and Asparagus Spaghetti w. Crispy Prosciutto and Burrata

INGREDIENTS

  • 1 pack spaghetti

  • 1 lemon

  • 3 cloves garlic

  • 80g butter

  • 200g prosciutto

  • 2 burrata

  • 1 bunch asparagus

  • 60g Parmigiano Reggiano

  • basil for garnish

  • extra virgin olive oil

  • Salt & Pepper

METHOD

  1. Cook pasta as per packet instructions in boiling salted water.

  2. In a pan, melt butter over medium heat and add in chopped asparagus, the zest of one lemon and crushed garlic.

  3. Add cooked pasta and a dash of pasta water and stir until combined. Grate in cheese to taste.

  4. In a small pan, fry prosciutto until crispy. Remove from pan and let sit on paper towel.

  5. Plate pasta on a large, shallow platter. Drain and pat dry burrata and place on top of pasta.

  6. Crumble prosciutto over the top and garnish with fresh basil, cracked pepper and a light drizzle of extra virgin olive oil. Enjoy!
