Honey and Soy Salmon

Makes approx. 10 cups

INGREDIENTS

  • 2 salmon fillet, skin on

  • 2 tbsp soy sauce

  • 1 tbsp Honey

  • ½ head lettuce
    (I use oak or butter for this recipe)

  • 1 Lebanese cucumber

  • 1 avocado

  • 2 sticks of rice noodles

  • garnish – sesame seeds, sliced spring onions

METHOD

  1. Pat dry salmon and liberally salt skin.

  2. In a hot pan, lay salmon skin side down. Cook for 4min until skin is crisp.

  3. Flip salmon and continue to cook until almost cooked through.

  4. Add soy sauce, honey and a dash of water and remove salmon when cooked.

  5. Cook the sauce for 30seconds longer or until glossy and sticky, then pour over rested salmon. Sprinkle with sesame seeds.

  6. Cook rice noodles according to packet instructions, drain and cool.

  7. Thinly slice cucumber and avocado.

  8. Prepare lettuce leaves buy washing thoroughly and pulling off leaves gently so they
    remain whole.

  9. Flake apart salmon, and add to a lettuce leaf with noodles, avocado and cucumber.
